Every New Jersey bride knows who Buddy Valastro is (well, almost every bride), so it was no surprise that Heather Thompson requested the star of TLC’s Cake Boss and owner of Carlo’s Bake Shop in Hoboken to design the cake for her February 2016 wedding at Liberty House in Jersey City. “We already knew that Buddy makes amazing cakes because he made our engagement cake, which was honestly the best cake we had ever tasted,” says Heather. Since she’s from Buffalo and loves the snow, Heather envisioned an extravagant wintry ice-themed cake, with her fiancé, Derek Dreyer, suggesting Elsa’s castle. “Derek mentioned Frozen during our cake consultation, since we often watched the movie with our niece and nephew,” she says.
But what turned out to be a surprise was that their ice-castle confection was chosen to be featured on an episode of Cake Boss, with Buddy himself delivering the cake the day of her wedding. “Buddy was super-excited to create this cake because he had never made anything like it before,” adds Heather.
Buddy teamed up with master pastry chef extraordinaire Jacques Torres to bring the castle to life. Buddy and Jacques created a wintry romance-themed cake that incorporated an icy look with amazing effects such as pulled sugar.
“Buddy made the entire planning process easy and great,” says Heather. “He was so kind, and he made the experience seem completely normal.”
Heather and Derek chose a red-velvet cake with cream-cheese frosting, which was a copy of what they enjoyed at their engagement party. “The cake was so awesome then, we decided to have the same choice for our wedding cake,” says Heather.
The cake consultation was filmed for the season finale of Cake Boss, and the film team showed up again to film the “big reveal” the day of the wedding. “We were led upstairs during our cocktail hour at Liberty House, and when they opened the doors, there was the most amazing, breathtaking cake! It was so beautiful,” Heather says. Buddy and Jacques were there for the cake reveal as well, with that unforgettable moment captured on film. Heather says the entire experience was so unexpected, but so very special to her, Derek and all of their guests.
